The Call of the Asparagus
Asparagus is:
Low in calories, only 20 per 5.3 oz. serving, less than 4 calories per spear.
Contains no fat or cholesterol.
Very low in sodium.
A good source of potassium.
A source of fiber (3 grams per 5.3 oz. serving).
An excellent source of folacin.
A significant source of thiamin.
A significant source of vitamin B6.
One of the richest sources of rutin, a compound which strengthens capillary walls.
Contains glutathione (GSH).
I don't know what it is, but Asparagus has been calling my name for the last couple of weeks. I dream about sinking my teeth into one, two or twenty spears at a time. You can eat them raw, steam them, broil them, pickle them and wrap them in prochuto ham for a nice appetizer. They even make a nice center piece. And get them while there HOT (in season). Nine to Ten months out of the year I pass by the asparagus in the produce section and have to turn my head in disgust of the prices. However, when February, March and April come around, it's asparagus every night...well, maybe every other night! ($1.29 lb at Albertsons!)
