You may cringe or even shutter at the sight and/or thought of sinking your teeth into one of these little morsels (namely my husband), but I love 'em! Where have I been for 31 years? Sure my mom would scramble a few eggs at lunch, toast some bread and slap a little miracle on it, but there is just something about The Dill Pickle. Oh, the ancient art of pickling and how it can transform a poor unsuspecting cuke into a zippity doo da day. Lucky for me my children love them too so why don't you shake things up in the household and serve something new or rediscovered? This is all you have to do to turn your mundane, haven't showed yet, dirty dish, what's that funny smell, day into a new and enlightening one.
Egg Salad Sandwich
Boil 4 fresh eggs for 10 minutes
Grate 1/2 cup of whatever cheese still looks descend in the fridge
Chop 1/2 cup of dill pickles (we like baby dills)
Reserve 1 Tb. of pickle zippity juice
1/4 cup Miracle or Mayo (I was raised on Miracle Whip. It still fits my fancy.)
A good squirt of mostasa (mustard)
1/4 tsp salt
And a shake of peppa!
Add the above ingredients into a nicely crafting mixing bowl or bargain Tupperware, lightly mix all ingredients until you have reached your desired consistency.
Add a sweep of butter to your bread of choice, be it wheat, rye, sour dough, pumpernickel, focaccia, flat...
Add the mixin's, layer with lettuce, tomato and you've got it!
Sure you can add or subtract an ingredient here and there, no problem. It's the "My day doesn't look so murky after all" factor we're aiming for.
My kids gobbled it up in 4 minutes flat. Even my 11 month old baby couldn't get enough of mommy's sandwich. And can you blame him, all he gets for lunch is some watered down baby cereal with a hint of sweet potato. Mmm.
Yes, tomorrow I just might shower before our anticipated luncheon. It's not everyday you get to please your palate with a homemade E.S.S., but why not everyday? I ask.

I agree on the convert to mayo idea. Also I love adding little chuncks of celery into it. I just love the crunch here and there.

Egg Salad is one of Nate's favorites. I like it too. . . fresh. . . before the smell gets to me. The girls love it and Ben wouldn't touch it with a ten foot pole. Enjoy! I will have to try your recipe.
